Cozy Bread Recipes 🍞 Soft Grissini & Garlic Rosemary Focaccia Muffins

In this week’s video, I’m sharing two deliciously simple vegan recipes you can easily recreate at home: Soft Grissini in three flavours and Garlic Rosemary Focaccia Muffins.
Both recipes use the same dough base, soft, fluffy, and infused with olive oil.
🍞 Basic Bread Dough (for both recipes)
This recipe makes approx. 17 Grissini and 12 (big) muffins.
I split it into two equal parts.
Ingredients:
2 2/3 cups warm water
4 teaspoons raw sugar
14g (2 packets) dry yeast
7 cups all-purpose flour
1/2 cup olive oil
2 tsp salt
Instructions:
In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
Add flour, salt, and olive oil. Mix until the dough comes together.
Knead for 8–10 minutes until smooth and elastic.
Cover and let rise in a warm place for 1–1.5 hours or until doubled in size.
Divide the dough into two equal parts, one part for each recipe.
🧄 Garlic Rosemary Focaccia Muffins
Extra ingredients:
2/3 garlic head, minced
A few sprigs of fresh rosemary
2–3 tbsp olive oil
Instructions:
Preheat oven to 180°C (356°F). Oil your muffin tin generously.
Fill each muffin cup with a ball of dough (less than you think — it will rise).
In a small pan, heat olive oil and quickly sauté garlic and rosemary for about 3 seconds.
Spoon the aromatic oil and herbs over each dough piece.
Bake for 15–18 minutes or until golden and fragrant.
Cool slightly and enjoy while warm!
🍅 Soft Grissini – Three Flavours
Extra ingredients:
2 tbsp tomato paste
A handful of fresh basil leaves, finely chopped
1 tbsp sesame seeds
Instructions:
Divide the dough into 3 parts. Mix one with tomato paste, one with basil, and leave one plain.
Roll into thin breadsticks (you should get around 17-18 total).
Brush them with olive oil.
Sprinkle the plain ones with sesame seeds.
Place on a lined baking sheet and bake at 180°C for 12–15 minutes or until slightly golden.
Let them cool slightly before serving.
