Cozy Vegan Recipes: Strawberry Tartlets & Rosemary Scones

If you've just arrived from my latest YouTube video, welcome! Today I'm sharing two of the recipes we prepared for our rainy afternoon at home: vegan strawberry tartlets and easy rosemary scones.
These recipes are intentionally simple, making them perfect for slow weekends, indoor picnics, afternoon tea or cosy gatherings with friends.

Vegan Strawberry Tartlets
These little tartlets look wonderfully elegant but are super easy to prepare. The crust only requires a handful of pantry ingredients, while the creamy vanilla custard pairs beautifully with fresh seasonal fruit.
🍽️ Servings: 10 tartlets using 10 cm (4-inch) tartlet moulds.
Tartlet Crust
Ingredients
1½ cups flour
1 teaspoon baking powder
1 tablespoon organic sugar
¼ cup oil
½ cup warm water
Instructions
Preheat the oven to 180°C (350°F).
Mix the flour, baking powder and sugar.
Add the oil and warm water.
Stir until a soft dough forms.
Knead briefly until smooth.
Divide into 10 portions and press each into a tartlet mould.
Prick the bases with a fork and blind bake* for 18–22 minutes, or until lightly golden.
Allow the tartlet shells to cool completely before filling.
*For blind baking, I like to use dried chickpeas. You can reuse them several times.
Vegan Vanilla Custard
Ingredients
2 cups vanilla-flavoured plant milk
½ cup cornstarch
Optional: 1 tablespoon sugar (if your plant milk is unsweetened)
Instructions
Whisk the cornstarch with a small amount of the milk until completely smooth.
Heat the remaining milk in a saucepan.
Add the cornstarch mixture and continue stirring over medium heat until the custard thickens.
If using unsweetened milk, add the sugar while cooking.
Allow the custard to cool slightly before filling the tartlets.
Decoration
Top each tartlet with:
Fresh strawberries
Mint leaves
Blueberries, raspberries or any seasonal fruit you enjoy
They're best served chilled and make a lovely addition to afternoon tea or an indoor picnic.

Easy Vegan Rosemary Scones
Traditional scone recipes often take a little more time, but this simplified version comes together in just a few minutes while still producing wonderfully soft, savoury scones with plenty of rosemary flavour.
They're especially delicious served alongside olives, cherry tomatoes, hummus, vegan cream cheese or your favourite savoury spreads.
Ingredients
2 cups flour
1 tablespoon baking powder
½ teaspoon salt
3–4 medium sprigs fresh rosemary, finely chopped
½ cup unsweetened plant milk
3 tablespoons olive oil
2 tablespoons warm water
Instructions
Preheat the oven to 180°C (350°F).
Mix together the flour, baking powder, salt and chopped rosemary.
Add the plant milk, olive oil and warm water.
Stir until a soft dough forms.
Lightly knead for about one minute.
Shape into a round approximately 2–3 cm thick.
Cut into wedges or use a round cutter.
Bake for 20–25 minutes, or until lightly golden.
These are best enjoyed warm with plenty of dips and a table full of little sharing dishes.
