Happy Summer Solstice, dear friends!
Todayās video marks a return to the world of The Dandelion PactĀ and follows Winifred as she discovers one of Aunt Florenceās peculiar possessions: an old recipe book filled with recipes, observations, advice, and unexpected notes.
Alongside the story, I baked vegan blueberry galettes inspired by the recipe book and, for the setup, a touch of the beautiful Practical Magic 2Ā aesthetic.

About Today's Story & The Dandelion Pact
This story can be enjoyed on its own, but longtime viewers may recognise a few familiar names and references from The Dandelion Pact.
If you are new to the series, The Dandelion PactĀ is a cosy story about friendship, kindness and finding magic in ordinary life.
When a young countryside teacher receives a box from her grandmother's lifelong friend, her solitary life suddenly turns into a beautiful search for happiness and wondeR. Set in the village of Bermothill during the late 1970s, the story follows Winifred Clarke as she discovers old diaries, forgotten traditions and lessons that inspire her to embrace a simpler and more meaningful life.
Recipe: Vegan Blueberry Galettes
These rustic vegan blueberry galettes are one of my favourite summer desserts because they are wonderfully simple.
The dough comes together in just a few minutes, the blueberries require no preparation, and the recipe can easily be adapted using whatever fruit happens to be in season.
For this version, I decorated the galettes with flowers and leaves cut from the same dough. I baked the decorations separately, almost like little cookies, before placing them on top of the finished galettes.
Ingredients
Dough
1½ cups flour
1 teaspoon baking powder
1 tablespoon organic sugar
¼ cup oil
½ cup warm water
Zest of 1/2 lemon
Filling
Fresh blueberries
Instructions
In a large bowl, combine the flour, baking powder and sugar.
Add the oil, warm water and lemon zest.
Mix until a soft dough forms.
Reserve a small amount of dough for decorations.
Divide the dough into four portions.
Roll each portion into a rustic circle.
Place a generous handful of blueberries in the centre.
Fold the edges over the fruit, leaving the middle exposed.
Cut flowers, leaves or other decorative shapes from the remaining dough.
Bake the decorative pieces separately until lightly golden.
Bake the galettes at 180°C for approximately 30ā35 minutes, or until golden.
Allow them to cool slightly before adding the decorative pastry flowers.
Notes
This recipe works beautifully with blackberries, raspberries, strawberries, peaches, plums or apples as well.
The rustic appearance is part of the charm, so don't worry about perfect edges. In fact, I suspect Aunt Florence would have considered slightly wonky galettes far more interesting.
