  • 1 cup whole wheat semolina

  • 1/3 cup whole wheat flour

  • 3/4 cup warm water

  • 1/2 teaspoon salt

You can use the sheets to make several kinds of pasta: ravioli, lasagna, fettuccini, cannelloni and more!


Add the semolina and salt to a bowl. Add half of the flour and mix. Pour gradually the warm water until it forms a dough. Knead for at least 5 minutes. Flour your working surface with the rest of the flour and flatten the dough with the help of a rolling pin until the dough turns very thin.

🥬🍄 Spinach and mushroom ravioli 🍄🥬

In this video, I made spinach and mushroom ravioli.

Making the ravioli:

  1. Mark the dough sheets with your pasta stamp or cutter to know where to add the filling.

  2. Add the filling and dab the dough lightly with water to help seal the sheets together.

  3. Place a second sheet of pasta over the first one.

  4. Press lightly around the filling to remove the air.

  5. Cut the ravioli out and knead again the remaining dough to make more.

For the filling:

  1. Boil the spinach and drain as much water as possible.

  2. Chop it and let it cool down before using it. You can season it or add chopped onion and garlic.

  3. Sauté the mushrooms with a bit of olive oil and season with a pinch of salt and dry oregano.

  4. Add chopped cherry tomatoes to the pan and some pine nuts.

How to serve:

  1. Add 2 tablespoons of cooked spinach to a pasta dish and the boiled ravioli on top.

  2. Then add the mushroom mix.

  3. Decorate with fresh parsley leaves

Extra tip

You can add leaves or edible flowers to decorate your pasta sheets by placing them between two thin sheets and rolling them several times.
