Easy Summer Dessert 🍃🍓 Vegan Oatmeal Ring Cake

Ingredients

These are the ingredients used in this video, but you can substitute or add others!

  • Rolled Oats

  • Vanilla soy milk

  • Strawberries

  • Raspberries

  • Blueberries

  • Mint leaves

  • Candid orange peels

Directions

  • Make porridge as you normally would (about 2 servings) but continue cooking it until it has a fairly solid consistency.

  • Place a small bowl/jar upside down on a baking sheet or baking form. Hold the bowl with one hand to keep it steady and carefully spoon the porridge all around. You can grease and flour the pan to make sure the ring doesn't stick.

  • Make sure the outer sides of the ring are as neat as possible.

  • Let it sit until the porridge has hardened and looks more or less dry. Then, remove the bowl from the centre.

  • Bake it for around 20 minutes at 180°C or until it has a good consistency to be cut with a knife.

  • Let it cool completely.

  • Carefully transfer the oatmeal ring to a serving plate. You can gently run a knife around the edges to loosen it from the pan before flipping it over onto the plate.

  • Wash the fruit and leaves and cut them into beautiful shapes when possible. I used whole raspberries, cut the strawberries into thin slices and the blueberries into "flower halves" (making connecting diagonal cuts around the whole blueberry).

  • You can also garnish it with nuts, raisins, candied fruit, grated coconut, etc.
