🍊 Easy, vegan and soft orange cake







INGREDIENTS:


- 2 cups all-purpose flour

- 1/2 cup unrefined sugar

- 1/2 cup orange Juice (approximately 1.5 oranges)

- 1/2 cup vegan vanilla yoghurt

- 1/2 cup olive oil

- 1/3 cup plant-based milk (e.g., vanilla soy milk)

- 2 tbsp orange zest

- 2 tsp baking powder

- Pinch of salt




INSTRUCTIONS:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment.


2. In a large mixing bowl, combine the orange juice, vegan yoghurt, vegetable oil, white sugar, orange zest, and plant-based milk. Whisk until the mixture is smooth and well combined.


3. Add the all-purpose flour, baking powder, and a pinch of salt to the wet ingredients. Mix until the batter is smooth. Be careful not to overmix.





4. Pour the batter into the prepared cake pan, spreading it evenly.


5. Place the cake pan in the preheated oven and bake for 45 to 55 minutes, or until a toothpick inserted into the centre of the cake comes out clean.


6. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.


7. Once cooled, you can optionally dust the top of the cake with powdered sugar or decorate it with orange slices and edible flowers for an extra touch. To affix the flowers, gently dab a bit of vegan hazelnut-chocolate spread on the back of each flower and carefully place them on the cake. This adds a beautiful and delicious finishing touch to your vegan orange cake.


8. Slice and serve the delicious vegan orange cake, and enjoy!
