Recipe: Raspberry Carrot Cake with Pink Glaze

A simple and delicious carrot cake decorated with pink glaze, berries, mint and pistachios for a cosy spring afternoon 🌷

Ingredients

  • 2 cups flour

  • 2 cups carrots, finely grated

  • 1½ tsp baking powder

  • 2 tbsp agave syrup

  • 1 pinch of salt

  • 3 tsp cinnamon

  • Âľ cup plant-based milk

  • â…“ cup olive oil

  • ½ cup walnuts


Instructions

  1. Add all the dry ingredients to a large bowl and whisk well.

  2. Add the milk and olive oil and stir gently until combined.

  3. Add the finely grated carrots and walnuts, then mix gently.

  4. Pour the batter into a cake pan lined with baking paper.

  5. Bake for approximately 1 hour at 170°C, or until a toothpick inserted in the centre comes out clean.


Recipe: Pink Vegan Icing

Ingredients

  • 1ÂĽ cup powdered sugar

  • â…“ cup plant-based milk

  • 1 tsp beetroot powder

  • 1 tsp vanilla

  • A few drops of lemon juice


Instructions

Whisk all the ingredients together until smooth and creamy. Adjust the consistency with a little more powdered sugar or milk if needed.

Once the cake has cooled, spread the icing on top and decorate with berries, pistachios and mint leaves.
