Welcome to a new post, dear friends,


The days are getting longer, the change of season is near… and while I’ve never truly been a summer person, not quite fond of the heat, always drawn more to the quiet charm of autumn or the softness of spring, I must admit, some of my fondest memories live in summer. The simplest ones, too. Like the way my mum used to make pudding on warm afternoons, or how my dad used to entertain me with a book filled with mathematical puzzles.


These memories stayed with me, inspiring these recipes, the video and the creation of Summer Pastimes – Fantasy & Cottagecore Edition, a whimsical magazine filled with cosy riddles and summery.

Easy Vegan Vanilla Pudding with Berries & Mint

This might be the simplest dessert I’ve ever made! Nothing like my mum's pudding, but still delicious and comforting. It’s one of those recipes that feels like a warm hug in a bowl.


You’ll need:

  • 2 cups vanilla soy milk (or other plant milk)

  • ½ cup corn starch

  • Optional: 1 tbsp sugar and a drop of vanilla extract if using unsweetened milk


To serve:

  • Fresh berries (I used raspberries and blueberries)

  • Optional: edible flowers and fresh mint


Instructions:

  1. In a saucepan, whisk together the corn starch and a splash of the plant milk until smooth and lump-free.

  2. Add the remaining milk and gently heat over medium heat, stirring constantly.

  3. After a few minutes, the mixture will thicken. Remove from heat once it reaches a pudding-like consistency.

  4. Pour into bowls or little glasses and let it cool. Chill in the fridge for at least 30 minutes.

  5. Before serving, decorate with fresh berries and a little mint.






Grape Lemonade

This grape lemonade is sweet, slightly tangy, and wonderfully refreshing — perfect for a picnic, a cosy afternoon in the garden, or your dream café moment at home.


You’ll need:

  • 2 tbsp lemon juice

  • 200 ml red grape juice (I used organic store-bought 100% juice)

  • 700 ml of cold water

  • 2 lemon slices

  • 2 sprigs of mint


Instructions:

  1. Combine all ingredients in a pitcher and stir well.

  2. Chill for a few hours and serve over ice.

  3. Add the lemon slices and mint right before serving for a summery touch.




Summer Pastimes – Fantasy & Cottagecore Edition


This season, I wanted to create something cosy but playful, something to bring joy on quiet afternoons and maybe a spark of childlike wonder. So I dreamed up Summer Pastimes, a printable magazine filled with summery brain-teasers, cosy puzzles, riddles, and hidden clues.
