In the rush of daily life, it's easy to overlook the small things. But I've learned that these tiny moments, the way we start our mornings, how we care for our space, the food we lovingly prepare, can be deeply meaningful. They anchor us, reflect who we are, and gently remind us that beauty can be found in the everyday.

And of course, no cosy day is complete without a comforting homemade treat. I featured two simple vegan summer recipes that are both beautiful and delicious.

🥕 Summer Rolls with Colourful Noodles

These rolls are vibrant and fresh, perfect for warm days or quiet picnics in the garden.
Ingredients (for 8 rolls):
100g rice noodles
1 tsp beetroot powder
1 tsp turmeric powder
2 medium carrots, julienned
3 tbsp green peas
1 avocado, sliced
A few edible flowers and parsley leaves
8 rice paper sheets
Sesame seeds to sprinkle
Directions:
Boil 1 litre of water, divide it into two bowls or pots, and add 1 tsp beetroot powder to one and 1 tsp turmeric powder to the other.
Soak half of the noodles in each mixture for about 10 minutes until they absorb the colour.
Once softened, let them cool down, then assemble the rolls with the vegetables, herbs, flowers, and noodles on rice paper.
Serve with your favourite dipping sauce. I used a leftover cold ginger and carrot soup, garnished with pumpkin seeds.
🍒 Vegan Banana Bread topped with Fried Banana & Raspberries
This banana bread is soft, rich, and comforting, with a bit of summer joy in every bite.
Ingredients:
3 overripe bananas
1/3 cup olive oil
1/3 cup raw sugar
1 1/2 cups flour
1 1/2 tsp baking powder
Pinch of salt
1/3 cup walnuts (optional)
A few pitted cherries (optional)
Suggested toppings:
Fried banana slices (brown them gently in a pan with vegan butter and a sprinkle of brown sugar)
Raspberries and mint leaves for freshness
Instructions:
Preheat your oven to 180°C.
In a bowl, mash the bananas and mix in the oil and sugar.
Stir in the flour, baking powder, and salt until just combined.
Fold in the walnuts and cherries.
Pour the mixture into a greased or lined loaf tin and bake for around 25–30 minutes (the baking time may vary depending on your oven).
Once cooled, decorate with your favourite toppings.
